Recipe: Greek Pasta Salad

So in an effort to clean out our pantry I threw something together today and it worked out pretty well thanks to a little pressure from my wife. It was a fairly simple recipe and you can “healthy” it up pretty easily. It is good in a small portion as a side/appetizer or you could add some chicken (or leave it veggie) and make a meal out of it. I would even say with some light italian dressing and some romaine lettuce you could beef it up quite nicely. It all started with a jar of kalamata olives and a 1lb bag of whole wheat rotini pasta.

The Wednesday Weigh In…

I weighed in on Wednesday (1/4/12) and was pleased to see that I was at 300.5 still. I wanted to be at least a pound less, but considering how poorly I ate over my holidays two week break I will take it! I have continued to go to the gym an average of 4 times per week, and am still aiming more at 5 times. I have cleaned my diet up considerably over the last several days, but I still need to get more mentally tough at night.

Thanks Jawbone!

I just wanted to do a quick thank you post to the people at Jawbone. I mentioned while I was at the Resort in Utah that I had purchased an Up from Jawbone and was less then thrilled with it’s performance. Well after the lackluster performance of the battery and the device in general the company offered a no questions asked refund for the device.

Can much happen in 6 days?

Well a ton can happen in 6 days, but not really all that much has. My routine over the past several days with my extended family at home has been to get up and go exercise (good!) and then proceed to watch my calorie intake rise as I let myself be baited into sweet Christmas-ee concoction. As of yesterday that part of my year is over! I love having my family around, but I am definitely looking forward to moving on and getting back to work on myself. I plan on being 299/300 at my next weigh-in on Wednesday the 4th of January.

It’s been a long time…

Yes I know it has been awhile since I have updated. The usual lack of motivation excuses are not really part of it this time, and more of they family things to do and Christmas travel/holiday things have been kind of in the way. Regardless I figured while I had a spare 30 minutes I should at least update some of my progress or lack thereof.

Still moving, and still losing…

On Monday I jumped right back in with my personal trainer Mary, and my wife tagged along for a good workout.  We did some cardio interval work and then went and did a core workout.  It was a solid hour and I did some 8.0, 8.5 and a 20 second 9.0 sprint to end my cardio.  It felt great to push it and show my wife and trainer how far I have come in just 3 short weeks.

Day 21 at the Biggest Loser Resort in Utah: The finish line… and a new beginning.

Such a mixture of emotions as I did my last hike today.  Both Kim and Sean were not feeling well today so they did not do the hike.  I actually spent my time hiking with Ilene, who has become a good friend in the last few days here.  We hiked all the way up to the stop sign and a little bit of the way out to the overlook.  It was a very easy hike for me at this point.  I barely sweat (which is crazy since I am a sweating machine) and was rarely out of breath.  It is truly amazing how fast your body can become used to hard work.  The feeling you get from getting more physically fit is hard to explain.  I had some tremendous news at my weigh in, I have lost 29.2 pounds in 3 weeks.

Day 20 at the Biggest Loser Resort in Utah.

It feels odd to only have today and tomorrow left here at the resort.  I have wanted to be back home since I got here pretty much, missing my wife and kids.  It has been tough to be out here, but it is definitely worth it this time.  I feel stronger physically, and more important I feel better mentally.
